Printable Oven Temperature Chart
Gas marks, Celsius and Fahrenheit on one page, with the fan-oven reduction so a convection oven does not overcook the middle.
How to use: For fan ovens use the fan column, not the conventional Celsius figure. For a recipe written in gas marks, the gas column is the primary value.
Gas marks are not linear
Each gas mark is roughly 10 to 20 Celsius degrees apart at the lower end and closer at the top. That is why a recipe quoting gas mark 4 is 180 C, but gas mark 8 is 230 C rather than 360 C.
Fan ovens run hotter
A fan oven moves air, so the same setting cooks faster and browner. Reduce the temperature by about 20 C (25 F) and check five to ten minutes earlier than the recipe suggests.
Thermostats drift
Domestic ovens commonly run 10 to 20 degrees off the dial, and the error changes with age. An inexpensive oven thermometer is more reliable than the display.
